Summary
In international trade, disputes as to responsibility arise when frozen foods, such as block frozen prawns (and indeed other foods), arrive at destination in unacceptable quality. In a broad study of cases of damage to perishable food commodities in transportation, the application of Hazard Analysis and Critical Control Point System logic to the available evidence indicated that gaps in the documentary evidence frequently occur. Thus the application of HACCP principles to the available evidence can determine where documentary evidence and control was inadequate, can direct the nature of records demanded, and, in spite of legal responsibilities which individual carriers may hold, can demonstrate the breadth of lack of due diligence in handling. A case study concerning frozen prawns is discussed.
