Table of contents: fundamental biological data on the preservation of vegetable products; refrigeration techniques applied to preservation (conditions of cultivation and postharvest treatments; precooling, storage, ripening; adjuncts to refrigeration for fruit and vegetable preservation); special preservation techniques for various fruit and vegetables (pome fruit, stone fruit; field crop vegetables, garden vegetables and root vegetables; ready-to-eat products, frozen products); marketing circuits and professional organizations. This course can be tailored upon request to meet the needs of countries or organizations that are interested.
